Peri Peri Wild Caught Barramundi Wings


Why waste some of the best parts of the Barramundi?! When you can make nourishing tasty finger food.  Heat up the BBQ and try out this new twist on classic chicken wings and impress your friends at your next gathering.

Ingredients 

  • Wild Caught Barramundi Wings, scaled and cleaned 
  • 1 roughly chopped red onion 
  • 4 garlic cloves peeled
  • ½ bunch coriander stems or root
  • 1 tbsp paprika 
  • 1 tbsp sugar
  • 2 tbsp salt 
  • 50ml vegetable oil 
  • 50ml apple cider 
  • Juice from 2 limes 


Dipping Sauce

  • ½ cup mayonnaise 
  • 1 – 1 ½ tbsp chipotle paste *adjust to preferred taste 

 

Method

  1. Clean Barramundi Wings and place in a bowl with oil to marinate whilst preparing other ingredients. 
  2. Place all other ingredients in a food processor and blend until smooth.
  3. Place wings over hot BBQ grill plate or coals and cook on both sides until charred and cooked through. 
  4. Brush over Peri Peri sauce mix and cook for a further 30 seconds each side. 
  5. To make dipping sauce, mix mayonnaise with chipotle paste and refrigerate.

 

Serve with fresh crispy cos lettuce leaves and dipping sauce. Garnish with slices of chilli, coriander and a wedge of lime.
